Bimber Distillery gears up for first whisky release

Bimber Distillery has announced the release its inaugural single malt whisky.

Bimber ‘The First’ will be available from September 13 and it is crafted from a hand-picked selection of the distillery’s Pedro Ximenez casks, which were laid down in 2016.

There will be a limited number of 1,000 bottles, of which 800 are for the UK market, and each is presented in an individually numbered, hand-crafted oak box made by Bimber’s on-site coopers.

Founder, Darius Plazewski, said: “It is an extremely proud day for Bimber to be finally able to share our single malt whisky with the world. We are delighted that The First is not only an enchanting single malt, but that it also stands true to the style and character of the whisky that we are committed to producing.

"There’s been an incredible amount of hard work put in behind the scenes and I want to raise a glass in thanks to both my team and the many enthusiasts who have supported us during the first three years.”

The First was produced from Bimber’s single farm barley, and fermented for seven days in bespoke, on-site constructed, American Oak washbacks. The five sherry casks which were selected to create The First were all previously utilised in a Jerez solar for several decades as opposed to industry standard seasoned casks.

Bimber is also launching a competition to encourage fans to open and enjoy their bottles. Owners of the first release, who share a photo or video of their numbered release with the cork clearly removed will be entered into a draw to win a one-of-a-kind Director’s Single Cask tasting with Plazewski at the distillery.

There will be 10 pairs of tickets available for this tasting, which will also include the opportunity to sample Bimber’s second bottling -  recharred American oak whisky due for general release in October 2019, which will retail at £65.
