People talk about food matching a lot, but it can be hard to make it work in off-licences. I've made a point of asking customers browsing for wine, 'are you looking for something to go with a meal?' and have told my staff to do the same. It's much better than waiting for them to approach us, and always gets us talking - and I've had plenty of positive feedback from customers who have loved the wines I've suggested with their meals.
I think I have a natural flair for wine and food matching, but some of my staff feel more unsure. I've photocopied the food-matching chapter from the WSET Intermediate textbook for them, and in quiet moments I get out recipe books and test them. It sounds demanding, but they love it - a couple of them have become real foodies thanks to me.
